The quantities below are estimates based on an average-sized animal cut to our Standard Cut instructions. Actual yield will vary depending on the individual animal’s size and condition.

Pork

Average side of pork at 90 lbs — Standard Cut

  • 8 shoulder steaks
  • 2 shoulder roasts (~3 lbs each)
  • 16–18 pork chops
  • 4 lbs of ribs
  • 8–10 lbs of side pork or bacon
